Turning Into A Cooking Fool

Trying to anyhow .. today I decided to try Sausage & Peppers using this recipe:  Teri’s Pressure Cooker Sausage & Peppers.   My modifications included:  Hot Rotel diced tomatoes & I added shrimp to come on up to the same amount of “meat” in the recipe.  My sausage was only 12oz and the shrimp was 1lb.  I did go ahead and use the same sweet peppers we love that was used in the recipe.

And on top of that, since the recipe mentioned serving it all over pasta, I’m going to also try my first Spaghetti Squash so I can serve it over that instead of pasta.  We’ve both been wanting to try the spaghetti squash since that is something George, and I of course, could always eat in lieu of pasta.

Turned out amazing.  We both loved it & agreed that we will definitely put this into our regular meal rotations going forward.  We even had if for supper too.  That is the most fabulous part of this pressure cooker – we actually want to eat the leftovers every time!
